Eggplant Parmesan

Eggplant Parmesan [**one of my dad’s favorites !!]

1 large firm eggplant
3-4 eggs
1 cup of flour
1 cup of Italian flavored bread crumbs
Beat eggs in a bowl, also add the flour and bread crumbs into separate bowls of their own
***You will also need tomato sauce and parmesan cheese

• Peel/remove skin from the eggplant
• Slice ¼” slices
• Dip each slice into eggs, flour, and bread crumbs (in that order !!)
• In a frying pan, add oil to warm
• Fry slices until light brown on each side
• In a casserole place sauce on bottom and place a layer of fried eggplant
• Spoon additional sauce over top of eggplant, sprinkle some parmesan cheese
• repeat layers until all eggplant is fried and layered in the casserole
• at top layer finish with additional sauce and parmesan cheese
• bake in oven at 375 degrees for 30 minutes !!
• after cooking, allow to sit for roughly 30 minutes before serving !!




Baked Cauliflower

Baked Cauliflower:

• 2 large –or 3 medium sized cauliflowers
• 1 box milk lunch crackers
• 2 sticks of butter

• Directions:
o Fill a large pot of water and bring to a boil
o While water is boiling, remove green stems from bottoms of cauliflower
o Then, use a knife and cut florettes from the stem of the cauliflower (variety of sizes)
o Drop all florets into boiling water –do not over cook !! cook until tender
o Remove cooked florettes from water and place into a casserole side-by-side
o In a pan, melt the butter
o Crush all crackers to cover top of cauliflower using a rolling pin
o Spread crackers over cauliflower and dribble the melted butter over the crackers
o Bake 350 degrees, 20 – 30 minutes –until top is light brown.


Stuffed Mushrooms

Stuffed Mushrooms

• Buy a package of medium sized mushrooms
 ( roughly 1” – 2” wide )
• Italian flavored bread crumbs
• Fresh garlic
• Parsley
• Parmesan cheese
• Oil
• Directions:
o Cut off mushroom stems and slightly scrape inside of caps
o Rinse in cold water
o Chop stems into tiny pieces
o Add to chopped stems –flavored bread crumbs, garlic parsley, and parmesan cheese
o Moisten stuffing with a drizzle of oil
o Stuff caps with mixture and place into a casserole.
o Sprinkle the mushrooms lightly with oi
o Bake at 350 degrees for ½ hour
